I tried a crockpot beef soup recipe over the weekend which was so-so. The potatoes could have been softer so perhaps I should try your Mom's layering idea. Got to admit I am a cracker kinda soup addition gal though. A sprinkling of grated Romano or Parmesan cheese on top too. I got that from my grandfather.
