Shepherd’s Pie, The Instant Version

Some years back, I came across a cookbook that had some traditional Irish dishes in it, and one of them of course is shepherd’s pie.  Now the REAL shepherd’s pie usually has lamb in it, but let’s face it, labor intensive isn’t really my thing, so I found an easier version.  This isn’t exactly that version, but it’s kind of the super easy Joy-fied version that requires minimum effort.  Hey I never claimed to have the French Laundry over here.  This is easy, it tastes good, and most importantly it’s almost impossible to mess up.

Ingredients:

  • 1 lb lean ground beef
  • 1 small onion, chopped
  • 1-12 oz jar of beef gravy
  • 1-12 oz package of frozen veggies (any kind will do, I used soup veggies for the one I made today)
  • 2-4 oz. packages of flake mashed potatoes
  • 1 1/2 cup of shredded cheese (I use colby jack but cheddar of whatever you like will do)
  • 2 tablespoons of ketchup
  • salt and pepper to taste

Brown the ground beef with the chopped onion, and then add the veggies, gravy, and ketchup and simmer until everything is well blended.  Flavor with salt and pepper.  While doing this, prepare the mashed potatoes as directed (be sure to add a little salt and pepper so it’s not just bland potatoes on there).  In a 13×9 inch baking dish, pour the meat mixture in, then spread the mashed potatoes on top, and top with cheese.   Bake at 350 for about 8-10 minutes or until the cheese is nice and melted.
